How to make the best pizza
Want to know how to make a delicious pizza?
Follow these four basic tips from Peter — who has been in the business since he was 15 — and our team of very experienced pizza chefs:
1. Use quality ingredients
It’s as simple as this: you need great ingredients to make a great pizza. From the flour in the dough, to the cheese that tops it. At Nitza’s, we always use the highest quality ingredients when making our pizzas (and everything else on the menu!).
2. Make it fresh
It may take more time, but trust us, you’ll taste the difference that freshness makes. We prepare everything daily, by hand, and in small batches. We don’t truck in pre-made anything, because it just doesn’t taste as good! So, if you’re going to be making pizza at home, skip those kits and try starting from scratch.
3. Pick the right cheese
Yes, the dough and sauce are very important (Peter has been perfecting his dough and sauce recipe for over 40 years!), but home cooks often make their biggest mistake when picking the cheese. We’ve tested and perfected our own blend of mozzarella cheeses, each with a specific milk fat content, to ensure there’s no burning, no grease, and no bitterness. Experiment at home with your own combinations, but make sure mozzarella is the base.
4. Get your oven hot
There are a few factors that go into making a light and crispy crust, but you may not know that one of them is the oven. Our dough recipe is designed to work with our very hot oven. You won’t be able to reach such a high temperature in the average home kitchen, but you should definitely crank it up!
